Dip veggies in eggs, then in flour, then cook in pan with some olive oil. Once all veggies are dipped, spill the remaining eggs on the pan.

I would recommend a sprinkling of sea salt on top, or at least a light vinagrette dipping sauce (balsamic vinegar or red wine vinegar would be good, perhaps with some low-sodium soy sauce).
